My 大白菜粉絲 kind of varies in soupiness... I usually go for slightly less soupy and more noodles, but I think that is because I seem to think soup is less filling than noodles, so I don't drink it as much. But I think when my mom would make it with meatballs, hers was more soupy than mine. Oh! I just noticed I forgot to mention when to throw in the mushrooms or tofu. I usually throw them in when I figure the veggies are about halfway done, although it really doesn't matter... if you stick the tofu in for longer than that, there's just a greater chance of it falling apart.
