Glutamates (http://www.cbc.ca/news/background/senses/umami.html), yeah, which are naturally occurring in a lot of foods -- some meats, mushrooms, cheeses, etc.; fish sauce (and anchovies, and thus by extension Worcestershire sauce), shoyu, kombu, all are high in glutamates.
