Further cooking (mis)adventures
Mon, May. 22nd, 2006 09:22 pmI cooked granola for the first time in what feels like months today, joy!
As such, I inaugurated my brand-spanking-new mortar and pestle, which indeed is much more effective and less frightening looking than ye old hammer and plastic bag method. I felt much like an apothecary or a mad scientist.
The feeling was cut short as I discovered, to my great dismay, that there was no more honey. I could have sworn there was honey in the house. I'm quite sure that after my mom helped organize the kitchen, I found the honey and noted to myself that the honey was in a strange place and to remember it. Try as I might, though, I couldn't find it again. So I ended up cutting up about 14 straws of lemon-flavored honey from Starbucks, each of which is supposed to be used to flavor a single cup of tea or something, not six cups of oatmeal.
For future reference, approximately 14 straws of honey is about a third of a cup. I added molasses to get the total to 3/4 a cup, all the while remembering that
heresluck had told me not to substitute over 1/4 c. of honey for molasses in the recipe. I don't remember the reason though. I'm sure I'll discover it thirty minutes from now.
Needless to say, the warning probably involved something like spontaneous combustion. If you don't hear from me again, take note from this cautionary tale and don't substitute too much molasses for honey!
(of course, the second my mom came home, she showed me where the honey was cleverly hidden. I will take comfort from the fact that there was probably less than 1/2 c. worth in there)

Tue, May. 23rd, 2006 05:38 am (UTC)Substituting molasses for honey is not dire! It's just that if you use more than about half molasses, the granola will stay rather sticky rather than becoming crunchy. Personally, I consider this tragic, because the crunchiness is The Best Part, but it's not as if sticky granola is inedible; it's just inferior. *g* (Using all molasses will also result in granola that tastes quite distinctly of, well, molasses, but since I like molasses this is not, for me, where the problem lies.)
Maple syrup is another perfectly acceptable subsitute, and it does not have the becomes-less-crunchy problem. My second-favorite granola involves replacing half the honey with grade B maple syrup. Yum.

Tue, May. 23rd, 2006 05:20 pm (UTC)Well, don't bring TOO much stuff, or you won't be able to eat all the stuff we'll buy at the farmers' market! Like bread and goat cheese and muffins and rhubarb turnovers and snap peas and pea vines and salad greens and honey sticks and maple sugar candy and jam and so on and so forth and WOW I miss my market. *g*

Tue, May. 23rd, 2006 05:30 pm (UTC)I was so sad about missing the English peas on Sunday and missing my farmers' market the coming weekend, but I will be able to get peas even so!
Shall definitely save room.
