Our ma po sauce has three essential ingredients: dried salted black beans, chili bean sauce (toban djan from Lee Kum Kee), and "sweet flour sauce" (also really made fom beans I think, Lian How brand). I'm going to have to look up this book jonquil mentions, too. Ours is good, but not singin' good.
