Yay it's summer!

The sun is out! There are even chirping birds! The trees are flowering and setting off allergies! I abuse exclamation points!

But, oh, sun, how I've missed you.

In celebration, I'm wearing a yellow sundress (with white cardigan on top for work). It's got cute giant daisies embroidered on the hem, and I have white sandals and it's just so sunny that every time I look down, I smile.

And! It's salad season! I finally have my kitchen back, hallelujah and thanks to the mom, who spent all of last week putting stuff away, which means I can cook! Except I don't particularly feel like eating anything hot right now.

So I beseech you all for good summer recipes, cold soups or salads or sandwiches.

Heh. I wish I had good summer recipes -- the only one I use is "boil some udon, dump it on cold water, drain, pour some kind of bottled seasoning over it," which is good for those roasting-hot days when anything sounds disgusting.

I vote for chilled Moroccan tomato soup (http://coffeeandink.livejournal.com/487561.html).

I just love that icon of yours. :) Salad tip: in the summer, I add mandarin oranges to mine and it really brightens them up. Also, sunflower seeds.

Mely has an excellent recipe... somewhere... for cold melon soup in two colors. I recommend using less honey and more lime juice, then topping th whole with an enormous dollop of whipped cream.
