I don't have a recipe at hand just now, but I have had and made some excellent vegan carrot cakes and apple cakes.

Pears poached in port are a nice winter dessert, and vegan by design. Or a warm fruit compote-- I really like prunes stewed in Earl Grey tea with orange zest.
